This pasta bake is full of hidden veggies, shredded and less detectable by my picky toddler.
Veggie Packed Pasta Bake
Ingredients:
- 1lb ground turkey
- 1 yellow onion, diced
- 1 zucchini, shredded
- 1-2 medium carrots, shredded
- 1 jar pasta sauce
- 8oz penne, or noodle of choice, cooked
- 8oz shredded mozzarella cheese
Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Cook noodles according to package instructions. Meanwhile in a large pan, add diced onion and ground turkey, browning the meat and breaking into crumbles.
- In a casserole dish (I used a 9×13) mix together the cooked turkey and onion mixture, shredded zucchini and carrots, cooked noodles, and pasta sauce. Top with the shredded mozzarella cheese.
- Cover with foil and bake for about 30 minutes, until sauce is bubbling. Remove foil and bake another 5-10 minutes or until cheese is slightly browned.
- Dig in and Enjoy!
Notes:
This is a super flexible recipe. You can mix up the type of noodles, use your favorite pasta sauce, or top with your favorite blend of cheeses. My family loves ground turkey, but you can easily make this vegetarian or swap out for chicken or beef. I use shredded veggies because they blend well with the sauce and my toddler gets some with each bite!
