Rainbow Mini Popsicles

This is a super simple snack recipe that is also a fun activity to do with your little one. I did all the prep and my 4 year old helped with the assembly. Get ready for summer with this cool treat.

We used chopped banana, raspberries, strawberries, grapes, and oranges

What you need:

  1. Ice cube tray
  2. Popsicle sticks or toothpicks
  3. Variety of chopped fruit, about one cup
  4. Juice of choice

How to Assemble

  1. Divide fruit evenly among the ice cube tray.
  2. Pour juice over the top of the fruit, filling each compartment to the top.
  3. Set a popsicle stick or toothpick in each tray compartment with one end sticking out. I set mine in at an angle and it held up together well.
  4. Carefully place in freezer until frozen.

Notes

  • Feel free to use whatever fruit you want. We used what we had that day in the fridge (we had some we really needed to use up)
  • We used a cranberry grape juice (again what we had in our fridge) but since it was a darker color juice you couldn’t see the fruit inside. If you want it to be more colorful you can use apple juice or flavored water.
  • I’ve made yogurt popsicles before and next time I may use some vanilla yogurt instead of juice to make it more of a hearty snack
